Morphology and anatomy of the grapevine. Systematic classification - Viticultural products - Problems and prospects of the Greek vineyard. Annual vegetation cycle. Budburst of the grapevine buds - Growth-Differentiation of shoots - Pruning of the grapevine. Physical and physiological characteristics of the canopy - New training systems for wine grape cultivars - Canopy management techniques and special applications of phytoregulatory substances in wine grape cultivars - Reproduction of the grapevine - Development and ripening of the berries. Changes in the chemical composition of the berries during ripening and factors that affect it.

Learning results

The purpose of the course is to introduce postgraduate students to the basic processes of the grapevine and their morphological and physiological basis, to the basic cultivation techniques that are used in a productive vineyard, as well as to the importance of grapevine cultivation for crop production.

The course curriculum aims to introduce postgraduate students to the methodology used in both the establishment and management of a modern productive vineyard, as well as to the viticultural techniques related to the training, fruiting and annual vegetation cycle of the vines, as well as to the stages of development and ripening of the berries.

Upon successful completion of the course, postgraduate students will have:

  • Understood the morphology and anatomy of the various organs of the vine and their utilization in productive Viticulture.
  • Understood the annual vegetation cycle, the phenological stages and their physiological basis
  • Understood the importance of canopy management techniques of the vines and their use in viticulture
  • Understood the importance of pruning for the training and fruiting of vines and their use in viticulture
